I can’t believe how long it’s been since the last blog. For this I apologise. But really there’s been a whole lot of hurry up and wait. So the Electrical took a lot longer then expected. We had to wait on a part to come from the States. This part was a sticker if you can believe it. A sticker that states the machine has been converted from a single phase to a three phase. Safety might start with an “S” but it begins with “YOU” ha ha ha. But really, I personally don’t get it. For a guy that worships motorcycle daredevils, Safety seems to be a bit passé. But it is what it is.
So we got that all done and the E.S.A. inspector came and we passed. Then the E.S.A. inspector filled out a certificate and emailed it to me, which in turn I have to e-mail it to my Engineer, who then has to come for another inspection in order to put his seal on it, and this, in turn, gets e-mailed to City Hall. Now I have to got to City Hall and get their signature. I’m informed they may also do an inspection of their own, or they may not, as the Engineer will have already done it.
My meeting with the Taxi Company didn’t go as planned so I had to move on there. I’ll get back to you when I know more info.
So the only thing left to do was the health inspection. Out of all the inspections needed, I have the most experience with the health inspectors. In two different provinces and two different countries, I know what they look for so I was quite confident. What do they say” Complacency kills?” I was getting the inspection done and it was going well when she says it- “Where’s you hand wash station?” (In the kitchen). My Jaw dropped. What a dumb mistake. I knew I needed one and had it in the plans for the kitchen. When we changed the configuration of the kitchen, I forgot to add the hand wash station to the drawings and just forgot about it thereafter. There’s a saying in racing “Don’t beat yourself.” So she wouldn’t sign off on the list I needed to get the business licence and liquor licence. I called Jacques and he said no problem we’ll get’er fixed up on Monday. But it is a huge problem. It means being pushed back again. Looks like I’m going to miss Valentines Day. The busiest single day in the restaurant world. It could be a blessing in disguise though. I mean I’d hate for opening day, or day 2 or 3 for that matter, to be a busy one. I’d rather open on a slower day and have 30 ppl happy then 60 or 100 with a “Meh, it was ok” feeling. So maybe it’s a good thing.
Maybe this week we’ll get it all done. This pushing back is killing me. And coupled with every time I go out, ppl asking me when I’m opening proved to be too much for me on Wednesday. Jake and I had another heated discussion. Actually I can’t lie. I completely lost it on him and was screaming almost in tears basically pouring out my heart and soul to this guy. Mitchell got up and went to bed; as Jake and I went toe to toe (verbally of course). I think this was long over due since I try to keep everything in. But I blew up! Being the amazing friend that he is, he sat there and took it, until I was done. He didn’t agree with everything, and told me where he thought I was wrong but listened and then asked what he could do to help. After we were done, we watched T.V. and laughed our heads off. That’s an awesome friend. The only other person I have a relationship like that with is my Dad. To be able to disagree and then move on is a rarity I feel. I am blessed to have two relationships of that kind.

Tomorrow, I am back to work to get this sink in along with a few other touch ups. Then I’ll call the health unit back in and hopefully we can get to City Hall no later then Wednesday.
